There are two different Chianti quality categories:
Timeless and elegant, it comes from the heart of the winegrowing region. Strict rules apply here with regard to harvest, maturity, production and storage period. Chianti classico must contain at least 80 per cent Sangiovese. It can be recognised by the «gallo nero», the black rooster, on the bottleneck. In the quality pyramid, «Gran Selezione» is at the top, followed by «Riserva» and the vintage «Annata». And what should it be served with? Enjoy Chianti classico wine with a beautiful piece of meat such as a rack of lamb, venison or bistecca alla fiorentina.
The little brother, made from a minimum of 70 per cent Sangiovese. The rules here are a bit more lenient. This is a textbook example of a wine for all occasions; perfect with bruschetta and crostini, pizza and pasta, cheese and salami.
