Update NowA solid – and really good! – plan, that’s what Marchese Niccolò Antinori had when he bought the imposing Castello della Sala fortress in Umbria in 1940. In the Orvieto region, famous for its white wines, the Marquis wanted to produce an outstanding white of his own to highlight his range. It succeeded – that much is known.
However, both the castle and the vineyards had to be completely renovated and replanted before the ambitious white wine could be launched. In 1985, the time had come: for the first time – and now under the management of his son Piero – the Cervaro della Sala, flagship of the house and, according to Gambero Rosso, one of the most famous white wines in the country, was bottled. In addition to the grapes for the elegant assemblage, regional, indigenous varieties such as Procanico (a clone of the Umbrian Trebbiano) and Grechetto are once again cultivated on a third of the 500-hectare estate.
