Industry jargon
… the sediment that forms during bottle fermentation, most often among unfiltered red wines.
Throughout the course of the ageing process, pigments and tannins bind together and form larger particles that settle in the bottle. This natural process does not negatively impact the quality of the wine in any way. You can simply separate the lees from the wine by decanting it before you enjoy it.
