And that’s exactly the key to pairing wine: how the food is prepared. Red wine needs bold flavours – roasted, herby aromas, fatty fish like salmon, tuna or swordfish and starchy sides like crispy roast potatoes. If you prepare your fish like that, then your favourite red is the perfect pairing.
