Highly concentrated balsamic vinegar made from cooked musts of Moscadello and Trebbiano grapes.
Recommendations
A marvellous seasoning when used drop by drop. Whether on a piece of Parmesan, a slice of cold roast or over a scoop of vanilla ice cream – heavenly!
Vinification
The late-harvested grapes are pressed straight after picking. The filtered must is then boiled and, after cooling, stored in oak barrels for four to eight months to initiate the balsamic process. This is followed by ageing in progressively smaller wooden barrels made from different types of wood. After twelve years, the concentrated and slightly sweet vinegar is removed from the final barrel and transferred to glass vials.
