A Prosecco with no added sugar - a genuine brut! It tastes lively, juicy and mineral, with pronounced notes of white peaches and ripe apples. The finish, supported by a beautiful perlage, is complex and harmonious.
Recommendations
As an aperitif but also great with cured ham or Mozzarella.
Vinification
The grapes for this superb Prosecco come from Glera vines with an average age of 40 years from the traditional vineyards of Col San Martino. After maceration on the skins, the grapes are gently pressed and fermented at a controlled temperature. The second fermentation happens at 12°C in pressurised tanks for around 60 days. The wine then rests for a further 120 days on its own lees.
