Vinification
Destemming is followed by cold maceration, separated by type: the mash retains contact with the skin for 24 to 48 hours before pressing. The must ferments at a controlled temperature of a maximum of 15 degrees before the varieties are blended. The blend of Nebbiolo and Barbera is then matured on lees for a few months.
