As an aperitif, with carpaccio of fish or, in winter, with a fondue.
Vinification
Both grape varieties are picked by hand, not destemmed, and carefully fermented separately as whole grapes. The young wine then rests for four months in stainless steel tanks before ageing again for around three months in the bottle. The autochthonic white grape variety Nascetta, which was close to dying out, has been cultivated more frequently in recent years and is experiencing a small renaissance. It produces a golden-coloured white wine with a mineral note and great ageing potential.
