Vinification
The process is designed to bring out the fruit flavour component: part of the grapes are destemmed after the harvest and gently pressed, while the rest undergoes several hours of maceration in stainless steel tanks to extract colour and aroma. After the skins are removed and the two musts are combined, the wine is clarified at a brisk 10°C, alcoholic fermentation takes place at a maximum of 15°C and the wine is refined in stainless steel.
