Versatile in combination; whether you prefer pork tenderloin or an entrecôte, the juiciness of this wine wonderfully enhances many dishes.
Vinification
The grapes for this wine come from the single vineyard Sciaranuova. After picking, the grapes are destemmed and vinified at the nearby Tascante winery at the foot of Mount Etna. Maturation takes place over a 12-month period in 25 hl Slavonian oak barrels. A small part is matured in 300-litre French oak barrels. After the assemblage of the two batches, the young wine matures for a further eight months in the bottle before being released for sale.
