Details
This vinegar is refined in oak, cherry and chestnut barrels and transferred to smaller barrels every year. This results in further concentration. It allows the vinegar to mature naturally and very slowly.

Salad dressings are at their peak with this vinegar.
Vinification
The late-harvested grapes are pressed straight after picking. The filtered must is then cooked and, after cooling, stored in oak barrels for four to eight months. The traditional process of ageing/maturing in ever smaller wooden barrels results in natural shrinkage. After a few years, the concentrated and slightly sweet vinegar is removed from the final barrel and transferred to glass vials.
