Vinification
The average yield of the approximately 45-year-old vines is between 28 and 30 hl/ha. Fermentation and maturation both take place in thermo-regulated stainless steel tanks and in a large wooden barrel. The young wine does not undergo malolactic fermentation to ensure it retains its freshness and fruit.
