Vinification
The grapes from these vines – with an average age of 25 years – are harvested at peak ripeness. The must then remains briefly in contact with the skins to achieve a heightened aromatic fullness. The alcoholic fermentation is carried out in traditional wooden casks. Further maturation on fine lees takes 15 months in wooden barrels and stainless steel containers.
