Details
This varietal Sauvignon owes its expressiveness to five months of maturation on the fine lees. Citrus fruits, white peach and sage, plus a hint of grass and green chilli peppers. Subtle and elegant on the palate with a taut minerality and a delicate finish.
Recommendations
Delicious with fish, white meat or asparagus risotto.
Vinification
After a rigorous manual harvest in September, the grapes are destemmed and lightly crushed at the winery. This is followed by a short cold maceration at a controlled temperature before the grape juice is fermented at a cool 12°C for twelve days. Once fermentation is complete, the young wine matures for five months in stainless steel tanks on its own lees, with regular bâtonnage.
