Pale straw yellow with greenish reflections. Seductive and elegant on the nose. Typical Sauvignon blanc flavours: white peach, a hint of green peppercorns, slightly grassy, some sage, but also citrus notes. On the palate, the wine is wonderfully subtle and elegant, just as it is on the nose. Juicy and refreshing, characterised by citrus notes. The finish is delicate and appetising.

This varietal Sauvignon owes its expressiveness to five months of maturation on the fine lees. Citrus fruits, white peach and sage, plus a hint of grass and green chilli peppers. Subtle and elegant on the palate with a taut minerality and a delicate finish.
Delicious with fish, white meat or asparagus risotto.
After a rigorous manual harvest in September, the grapes are destemmed and lightly crushed at the winery. This is followed by a short cold maceration at a controlled temperature before the grape juice is fermented at a cool 12°C for twelve days. Once fermentation is complete, the young wine matures for five months in stainless steel tanks on its own lees, with regular bâtonnage.
