How sweet do you like your sparkling wine?


After the second fermentation, the winemaker decides whether his sparkling wine will turn out dry, semi-sweet or sweet with the addition of sugar.

We explain the sparkling wine production process in detail in this article. Now we turn our focus to the addition of sugar (known as dosage), by which the winemaker determines how dry or sweet his sparkling wine should be. There are different levels of sweetness for sparkling wines:

  • Brut Nature
    0–3 g/l of residual sugar = less than 1 cube of sugar
  • Extra Brut
    0–6 g/l of residual sugar = max. 1.5 cubes of sugar
  • Brut
    6–12 g/l of residual sugar = 1.5 to max. 3 cubes of sugar
  • Extra Dry
    12–17 g/l of residual sugar = 3 to max. 4 cubes of sugar
  • Dry
    17–32 g/l of residual sugar = 4 to max. 8 cubes of sugar
  • Demi-Sec
    32–50 g/l of residual sugar = 8 to max. 12 cubes of sugar
  • Doux
    50+ g/l of residual sugar = more than 12 cubes of sugar
