The grapes for the Sforzato dry on racks known as «graticci», where they lose a quarter of their weight and acquire greater flavour. A top Veltliner of particular vigour with a ripe, spicy bouquet.

Vinification
After being hand-picked, the Nebbiolo grapes are left to dry for three months on special slatted racks known as graticci. They lose 20 to 25% of their original weight. The resulting concentrated must is fermented and then aged for five years in small and large oak barrels.
