Raffaele Boscaini from the Masi wine house has joined the ranks of Prosecco producers.
«Canevel», in the local dialect, means «small winery». And that is exactly what the azienda, which was founded in 1979 and is now part of the Masi wine house, strives to be: small and sophisticated. Produced in Valdobbiadene, the heart of the Prosecco region in Veneto, the exquisite sparkling wines are allowed to carry the highest regional quality seal docg (Prosecco doc covers a larger region). The grapes for these fine wines come from the house’s own vineyards as well as around 60 winegrowers under contract.
Canevel produces according to the Charmat method, which involves secondary fermentation in pressurised tanks using yeast and sugar. In contrast to the cheaper Prosecco Frizzante from other producers, where the carbon dioxide is added directly to the still wine, sparkling wines fermented using the Charmat method may bear the addition «Spumante».
