I recommend the orecchiette cime di rapa – a Puglian classic that we make from top-notch ingredients. The quality of those ingredients is naturally important to me, and what’s also important is ensuring my kitchen runs smoothly. Precise organisation with a focus on quality is what really impresses me about Bindella – where I have been working since 2016. And the fact that customers are treated on a personal level despite the size and complexity of the business. By the time I got to meet Rudi Bindella in person, it was clear to me: we share the same values!
