Delicious with hearty meals, roasts, game and mature hard cheeses.
Vinification
Within the city walls of ancient Pompeii, five plots were planted with a total of only one hectare of vines (Piedirosso and Sciascinoso). The grapes are harvested by hand in the second half of October, with the lowest yields. After gentle pressing and vinification, the wine is aged for twelve months in barriques.
