Details
Antinori’s Riserva matures for six years in barriques and in the bottle before it goes on sale. Fruity, spicy bouquet with notes of chocolate. Well-balanced silky tannins, beautiful acidity, very elegant.
Recommendations
Mmm ... Delicious with fillet of beef with vegetables or, in the hunting season, with saddle of venison with spaetzle and red cabbage.
Vinification
After destemming and gentle crushing, the must ferments for around 20 days in wooden vats with manual stirring of the surface pomace to preserve the fruit and tannins. Alcoholic fermentation takes place in small oak barrels, where the wine also undergoes malolactic fermentation. The wine is aged for the first six months in small wooden barrels, then for twelve months in 800-litre oak barrels, and finally for a further twelve months in 3,000-litre barrels. This is followed by bottling and a final refinement period of over a year.
