Malbec is a newcomer among the grape varieties grown in Italy! The name «Vie Cave» derives from the track carved out long ago by the Etruscans from the tufa of the Sovana region – around the vineyards of modern-day Fattoria Aldobrandesca.
Recommendations
The Malbec wines, primarily known from Argentina, pair superbly well with grilled beef dishes, but also enrich autumn venison entrecôte with porcini mushroom sauce, pasta with a hearty Bolognese or brasato from the oven.
Vinification
After gentle pressing, the must is transferred to stainless steel tanks. The three- to four-day cold maceration at 5-10°C is followed by temperature-controlled alcoholic fermentation. The wine then goes through malolactic fermentation and a ten-month rest phase in French oak before ageing in the bottle for the final few months.
