Vinification
ÙE is a grape distillate invented by Giannola and Benito Nonino on 27 November 1984. The skins, pulp and juice of the whole grapes are distilled in a single pass. ÙE® has the elegance of an eau-de-vie and the character of grappa, created discontinuously with the separation of the head and tail, in special exclusive steam stills by Benito Nonino. Distillation takes place very slowly to ensure proper evaporation followed by condensation; this allows the organoleptic properties of each grape variety to be preserved.
