Details
The Solaia, created in 1978, is dominated by Cabernet, but also features Sangiovese. Cassis, coffee, liquorice, noble wood; a pithy, elegant, juicy wine that is left to mature for 18 months in barriques.
Recommendations
Tip: Forget your reverence for a moment and simply serve this wine with a fine piece of grilled meat and some beans.
Vinification
The distinct grape varieties are harvested separately at the optimum ripeness. After destemming and gentle pressing, the maceration takes place in 60hl wooden vats. The young wine, still separated by variety, then matures in barriques of French oak for approx. 18 months. After this, the wines are blended and rest a little longer before being bottled. Only around 35,000 bottles are produced each year!
