The winemaking families in the vineyards of Lazio show their talent for such wines – in all price categories. This all-rounder flatters the nose and the palate with its floral freshness. The name gives a nod to the adjective «sovente», meaning frequent or often.
Recommendations
An all-rounder that pairs just as well with light fish dishes and cold cuts as with a vegetable platter or a vegetarian pasta dish.
Vinification
The grapes, harvested in early September, produce a varietally pure Viognier of exceptional balance. The gentle vinification aims to achieve a fresh and flavourful result: fermentation at a cool 13-15 degrees preserves the benefits of the variety and the properties of the terroir. Perfected through a four-month bottle-ageing process.
