Intense yellow. Expressive, lively and multi-layered on the nose. Aromas of white blossom such as hawthorn, acacia and elderflower. Elegant, noble fruit, redcurrants, a little grass. Juicy and well balanced on the palate. The aromas of the nose are reflected in the flavours. The finish is of medium length, rich in aromas and well balanced.
Well suited to pan-fried saltwater fish accompanied with a light sauce. Superb with asparagus or fresh goat’s cheese.
Vinification
The Sauvignon blanc grapes from various parcels are harvested by hand and gently pressed separately according to location. The grape juice is left to stand for around 24 to 48 hours in stainless steel tanks, where it is then fermented. The subsequent maturation is also done without the use of wood to retain the natural freshness and intense aromas of this grape variety.
