Dark, dense ruby. Dense, intensely spicy bouquet. Generous amounts of ripe black fruit, coffee, tobacco, roasted nuts, dried fruit, toasted wood. Complex and demanding. A soft and smooth attack on the palate. Then rich and majestic, with ripe black fruit once again. This is complemented by sweet spicy nuances and notes of toasted wood, mocha and black pepper. Pithy, ripe tannins. Long, persistent finish with excellent balance.

For the production of this Riserva, only the very best grapes from 30-year-old vines are selected and dried on lath racks. After several years of ageing in large wooden casks, this wine has a dense, spicy, complex, incredibly multi-layered and majestic appearance. Impressive!
Recommendations
Accompanies lavish meals such as game dishes. Also typically served with risotto al Amarone. Mature cheese.
Vinification
For the Amarone Riserva, the best Valpolicella grapes from 30-year-old vines are carefully harvested at the beginning of October, checked again grape by grape and any unripe, dry or damaged fruit is removed. Afterwards, the grapes remain on special lath racks in well-ventilated rooms to dry for longer (about three months) than with «normal» Amarone. They lose 25 to 40% of their original weight; at the same time, sugar, flavour and extract become more concentrated. The fermentation process, which lasts around 90 days, is initiated around mid-March in temperature-controlled stainless steel tanks. The wine is then matured in wooden barrels of 6 to 8 hl for several years.
