Tasting notes
Glowing straw yellow with vague greenish reflections. Tender and fine on the nose with aromas of peaches, white figs, green apples and some mineral notes. In the mouth, this sparkling wine appears fresh, rich in structure and endlessly full-bodied. The aromas of the nose are reflected in the flavours. These are complemented by notes of citrus fruits. Long and tasty in the finish.

Recommendations
On its own, it makes a wonderful aperitif but it also harmonises beautifully with finger food and cheese – or with fish dishes.
Vinification
The grapes for this outstanding sparkling wine speciality grow on the Colli Orientali. Once the grapes have been pressed in their entirety, the first fermentation takes place at 14°C, partly in stainless steel tanks and partly in barriques. The second fermentation is done in autoclave tanks at 12°C. The wine rests on the lees for a period of at least 30 lunar phases. Once the yeast has been removed from the bottle, the spumante spends another 12 months in the bottle to complete the maturation process.
