Vinification
Immediately after pressing, the grapes undergo fermentation for 49 hours at a temperature of 18°C, which brings out the typical range of aromas of the Sagrantino. During the ensuing fermentation, which is done without contact with the skins, the must is gently transferred onto the pomace several times to allow optimal development of the elegant tannins. The ensuing wine is then stored for 24 months in 3,000-litre barrels, where it undergoes malolactic fermentation.
