Details
The Räuschling is a local speciality from the Zurich region, which is sadly seldom cultivated. Matthias Bechtel is helping this variety make a well-deserved comeback. Thanks to modern viticulture, his Räuschling grapes achieve top quality and show particularly substantial fruit aromas reminiscent of citrus fruits and green apples. The maturation in acacia wood barrels and the subsequent ageing on the fine lees give this interpretation an exceptional freshness and depth.
Recommendations
An ideal accompaniment to freshwater and salt water fish, but also delicious with light poultry dishes and savoury pastries.
Vinification
The grapes reach peak ripeness in the best locations in Wil (Canton of Zurich). This brings opulence and full-bodied aromas to the Räuschling, which otherwise tends to be reserved and mineral-like. Through the maturation in acacia wood, it accrues additional freshness, which is further reinforced by the ten months spent on the fine lees.
