A sophisticated accompaniment to grilled saltwater fish or a refined sauce, asparagus, veal and poultry.
Vinification
Upon arrival at the winery, the grapes are pressed separately based on the location of the vines. Each batch is then cold-stabilised, clarified, macerated for between two and five days and then fermented. After fermentation, the young wine is matured for six to eight months in small wooden barrels, then blended and bottled.
