The aroma of this elegant Cuvée is reminiscent of grapefruit, passion fruit and white peaches with a touch of fresh almonds on the finish. Well-balanced acidity – all-round refreshing drinking pleasure.
Recommendations
This white wine is particularly delightful when served with Mediterranean grilled fish, seafood of any kind and white meat.
Vinification
The grapes are harvested by hand in the early hours of the morning and transported in 15-kilo containers to the winery, where they are chilled immediately to retain their aroma potential. After careful selection, the grapes are pressed slowly and gently with a special focus on preventing oxidation. After a clarification process lasting around 12 hours, 23% of the must is transferred to new barriques, 27% to used barriques and the remaining 50% to steel, concrete or wooden vats. The alcoholic fermentation never exceeds a temperature of 22°C. There is no malolactic fermentation. During the six-month ageing process, the lees are stirred at specific intervals. Before bottling, the different batches are blended together and undergo a light fining process. Finally, the wine is refined for 12 months in the bottle before being released for sale.
