The first merchants tasted the Salgesch Pinot Noir on their journey through the Alps. Back on their steeds, plagued by overindulgence, they found themselves cursing this delicious wine as a devilish seduction – «Lucifer».

Vinification
Before the actual fermentation starts, some of the grape juice is extracted from the mash. This must is then used to make the Oeil-de-Perdrix. Only a little must remains in the fermenting mash compared to the amount of grape marc, and this is used to make the Pinot noir known as Lucifer. This measure helps support the valuable structure and colour of the Pinot noir.
