Details
The almost one-year barrique ageing is excellent for this Pinot nero. Distinct floral and fruity notes of redcurrant and strawberry. Refined and elegant on the palate, with silky, soft tannins and a wonderfully long finish.
Recommendations
Always a delight with game or pasta with a creamy mushroom ragout.
Vinification
After their careful harvest from the vineyards of Castello della Sala near Orvieto, the grapes arrive at the winery. After a partial maceration period, fermentation takes place in temperature-controlled stainless steel tanks at around 26° Celsius for about a week. The young wine is transferred to barriques for malolactic fermentation. The wine is then transferred to new French barriques and aged for ten months. It is refined in the bottle for a further eight months before being released for sale.
