Vinification
After the harvest and careful selection, the grapes are pressed and fermented in stainless steel tanks. Some of the young wine go through malolactic fermentation. The following maturation is also carried out in thermoregulated stainless steel tanks, with the young wine resting on the yeast to lend greater complexity to the aromas.
