Radiant golden colour. Delicate and caressing aroma reminiscent of honey, crème pâtissière and white peaches. On the palate it proves fascinating thanks to its compact structure and pleasant, intense sweetness.
Long appreciated as a meditation wine, it is surprisingly successful when paired with foie gras, buffalo ricotta and acacia honey, or with butter biscuits and cream cakes. It is also superb with soft cheeses, such as Robiola and Tuma de paia.
Vinification
The Picolit grapes are harvested by hand very late in the season and are then stored for around 60 days in the drying room. During this time, the grapes lose around 40% of their weight. The grapes are then destemmed and pressed. Some of the must undergoes alcoholic fermentation in stainless steel tanks, some in oak barriques. The young wine is then transferred to small containers made of high-quality steel. Finally, it is refined for six months in the bottle.
