Details
Its name comes from the Latin «Fraxinus Ornus» for the Manna ash, whose precious sap was highly sought after as far back as biblical times. This Spätlese of Petit Manseng sparkles with silky sweetness, delicate acidity and a spicy finale.
Recommendations
Definitely worth pairing with panna cotta, tiramisù or gorgonzola dolce.
Vinification
Each round of harvesting created a single vinification, which was pressed and vinified separately. After an extended light pressing and natural clarification overnight, the various production units were fermented in up to 100% new oak barriques at a temperature not exceeding 22°C. Once they reached the desired balance between sugar and alcohol content, the fermentation was stopped. No malolactic fermentation was carried out. After being decanted, the wines matured for 12 months before the various entities were blended to form a Cuveé. This was followed by one year of ageing in the bottle, after which time the wine was finally ready for market release. «Ornus dell’Ornellaia is born out of our passion for our terroir and our desire to bring its potential to fruition and create great Spätlese wines. The mild, well-ventilated climate, typical of autumn in Bolgheri, is ideally suited for this.
