Ornellaia Bianco – Toscana igt, Ornellaia

The grapes were harvested by hand in the early hours of the morning in 15 kg crates and cooled immediately on arrival to the cellar in order to preserve their aromatic potential. After careful selection, the entire grapes were pressed slowly and gently, with particular attention paid to protecting them from oxidation. After undergoing static decanting, which lasted around 24 hours, all of the must was transferred to 30% new and 70% used barrique barrels for alcoholic fermentation at a maximum temperature of 22°C. No malolactic fermentation was carried out. Ageing on the lees continued for 12 months with regular bâtonnage during the entire process and was completed in a stainless steel tank for a further three months. Before bottling, the various base wines were blended and slightly clarified. The wine was then left to age in the bottle for a further six months before being launched on the market. «Ornellaia Bianco symbolises the winery’s desire to express the exceptional characteristics of its terroir not only with red wine, but also with an excellent white wine. This white wine is grown on north-facing vineyards in Bellaria, on sandy and loamy soils. The microclimate of Bolgheri has a moderating effect on the hot summer days experienced in this area and offers optimal conditions for the ageing process.
