Vinification
The Extra Vergine Ornellaia olive oil is pressed from olives harvested from the approximately 2000 olive trees on the Tenuta dell’Ornellaia estate, most of which are over 100 years old. The typical Tuscan olive varieties of Frantoio, Moraiolo and Leccino are used but also the local varieties Gremignolo di Bolgheri, Olivastro di Suvereto and Ornellaia. The latter was named after the estate that now sits at the heart of the vineyard. The olive harvest is carried out by hand. To prevent oxidation and to produce the best possible quality of oil, the olives are immediately fed into the mill, where they are cold-pressed within two hours of delivery. The freshly pressed olive oil with its wonderfully fruity aroma and its anti-oxidant properties is initially filtered then stored at a controlled temperature in stainless steel tanks, where it can best maintain its organoleptic qualities.
