Recommendations
Pairs wonderfully with Prosciutto Parma, lasagne and cherry tartlets.
Vinification
Immediately after the grapes have been pressed, the must is cooled to 0°C and stored at this temperature. When a batch of Lambrusco is needed, the temperature of the required must is allowed to rise and selected yeasts added. As soon as the desired residual sugar level is reached, the fermentation is interrupted by strong chilling and the wine is filtered and bottled.
