Pale yellow with greenish reflections. Ripe citrus fruit on the nose, some gooseberries, with some discreet bread crusts in the background. Wonderfully fresh on the palate and yet rich and powerful. A great combination of juicy acidic balance and a spirited, powerful body. Very good length with high aromatic persistence.

Vinification
The grapes of the Inzolia variety grow on the 8.4-hectare vineyard of Barbabietole. The soil here is predominantly loam and chalk. The Sauvignon blanc comes from the small (2.2 hectares) vineyard of Santa Tea, which is dominated by fine-grained sandstone. The vines of both varieties grow between 500 and 700 metres above sea level in the centre of the island. Both varieties are fermented in stainless steel tanks at a controlled 16 to 18° Celsius. Malolactic fermentation is actively avoided in order to retain the freshness. After successful fermentation, the young wine matures on its own lees for four to five months in stainless steel tanks. Once bottled, it remains at the winery for a further six months.
