Vinification
The grapes are harvested at the right level of ripeness and vinified in temperature-controlled stainless steel tanks. The maceration, carried out at temperatures not exceeding 28°C, lasts 8-10 days. Malolactic fermentation is completed at the beginning of winter. This is followed by further ageing in stainless steel tanks for eight months and an additional four months in bottles before the wine hits the shelves.
