While it is perfectly possible to enjoy this wine when young, it also has great ageing potential. In colour it is an intense ruby red with violet reflections. On the nose it shows a lovely complexity with aromas of small, red berries and balsamic notes, reminiscent of Mediterranean maquis. In the mouth, the high quality of the tannins is very distinctive, proving smooth and silky.

For this blend of French noble varieties, each grape variety and parcel is vinified separately. The wine is matured for 15 months in barriques and another six months in bottles. A multifaceted wine with a berry-spicy bouquet, dense structure and elegant wood.

A great match for elegant pasta dishes (e.g. with truffles) or tagliata del manzo with Mediterranean vegetables.
Vinification
Le Serre Nuove dell’Ornellaia, a genuine «Second Vin», comes predominantly from the younger vineyards of the estate and is produced with the same dedication and attention to detail as Ornellaia. The grapes for the Le Serre Nuove are harvested by hand and undergo a strict selection process. Each grape variety and parcel is vinified separately. The alcoholic fermentation happens over two weeks in stainless steel at temperatures between 26° and 30°C, followed by a maceration period of 10-15 days in total. The young wines age for 15 months in 25% new and 75% used barriques. After the first twelve months they are blended together and further refined for three months in barriques. The young wine then rests for around six months in the bottle before being released on the market.
