Pale yellow with greenish reflections. Aromatic on the nose. Gooseberry bouquet, white flowers, citrus notes. Linear and refined on the palate. The aromas of the nose are reflected in the flavours. This is accompanied by a delicate aroma of white almonds. A stimulating freshness with a delicate lemony finish.

Recommendations
Enjoy with asparagus dishes in spring. Goes well with seafood terrines and spaghetti with lobster. Excellent as an aperitif, and paired with fromage frais and goat’s cheese.
Vinification
During picking, only the ripest grapes are selected, excluding any rotten or unripe fruit. If necessary, a second inspection will be performed. After pressing and a preliminary sedimentation at low temperature, the fermentation starts at around 12/13°C and stops at around 19°C. It is aged exclusively in one-year-old oak barrels that were previously used for the Premier Cru. After two weeks of fermentation, the wine remains in the oak barrels and is regularly stirred on the lees for three to four months. The ageing process in barriques usually takes nine months.
