Vinification
La Hoz rosé is an exceptional sparkling wine made using the classic method from the red Montepulciano grape variety. Michele Bernetti describes his first-rate sparkling wine with the attributes «Emotions», «Courage», «Initiative» and «Passion». Characteristics which were required for the rebellious project of making a sparkling wine from the red Montepulciano grape variety. Character traits and features which also describe the famous Napoleonic General La Hoz and his deeds. The namesake of this sparkling wine was a hero, a renegade and a robber who is seen as the first Italian patriot. La Hoz lived long before Mazzine, Garibaldi or Cavour. He fought and died in 1799 in Ancona for the idea of a unified Italy. The grapes are picked by hand with small crates at the end of August and the beginning of September. The vineyards lie at 100 to 150 metres above sea level in the village of Osimo, near Ancona. After destemming, the grapes undergo a very short cold maceration before passing through all phases of the production process for classic bottle fermentation. For this special rosé, the maturation on the lees lasts for 30 months. Following disgorgement, the sparkling wine rests for a further six months in the bottle before going on sale.
