This ruby-red Cru offers seductive notes of red berries, spices and a little undergrowth on the nose, while on the palate it is full and hearty with balsamic tones and a smoky character.
Recommendations
The rustic districts of Abruzzo give rise to the culinary preferences of the Jorio: Mediterranean vegetables and grilled meat. Alternatively, it can be served with pasta al ragù!
Vinification
The vineyards, from which the Jorio is produced, are located in various communities in the Abruzzo region. The grapes are picked by hand, usually between the end of September and the middle of October. After the harvest, the grapes are destemmed and gently pressed. The ensuing fermentation lasts for 10 to 12 days in stainless steel tanks at a controlled temperature of between 26 and 28 degrees Celsius. The young wine then matures in oak: 50% in large 5,000- to 8,000-litre barrels and 50% in barriques, which are in their third or fourth year of use. This continues for 12 months. After blending, the Jorio rests for a few months in the bottle before going on sale.
