Vinification
The vineyards lie in several locations around San Gimignano at heights of between 120 and 300 metres above sea level. The Vernaccia di San Gimignano is a grape variety with a very long history. The name is supposed to have come from the Latin «vernaculus», which means «local», «of this place». After being harvested at the end of September, the grapes are gently crushed and the pressed must is fermented and matured at a controlled temperature in stainless steel tanks.
