Tasting notes
Intense ruby red with purple reflections. Intense and fruity on the nose. Aromas of blackberries and cassis along with spicy notes, dark chocolate, coffee and an elegant sweetness on the nose. A rich initial sensation on the palate with some fruit extract. A juicy and precise structure. The tannins are present, but well integrated and finely honed. The aromas of the nose also emerge on the palate. Plenty of black fruit, coupled with roasted aromas. The finish is pleasant, aromatic and long-lasting.

Details
The wild boar on the label is there for a reason: for one thing, the Tuscans prize its meat as a delicacy, for another, herds of wild boar have an unfortunate tendency to decimate whole vineyards. Since its launch, the Insoglio has been a firm favourite with oenophiles.
Recommendations
Perfect with grilled fish, spicy pasta and pizza.
Vinification
The grapes for the Insoglio del Cinghiale are picked by hand. After gentle crushing, the alcoholic fermentation takes place in stainless steel tanks. Some of the young wine is then transferred to barriques for the malolactic fermentation. The subsequent maturation for 30% of the young wine is carried out over four months in one-year-old French barriques. The rest of the young wine is matured in stainless steel tanks. Finally, it ages for a further three months in the bottle.
