An ideal accompaniment to Mediterranean cuisine with a lot of herbs, mature cheese and braised meat dishes.
Vinification
The grape varieties are harvested separately by hand. Traditional fermentation with naturally occurring yeasts takes around two to three weeks at a controlled temperature of 30°C. The surface pomace is often poured over to achieve optimum colour and aroma, especially at the start. After fermentation, the wine ages for nine months in large wooden vats.
