A multi-layered Chardonnay, matured on the fine lees and refined in barrique. The nose has notes of ripe banana, pineapple and mango, along with spicy woody nuances. Full and soft on the palate.
Recommendations
Goes with fish and white meat, but also with creamy sauces. Delicious with panzanella (Tuscan bread salad).
Vinification
The grapes for this wine come from one of the highest and best locations on the estate. «Fontanelle» lies at 250 metres above sea level. The grapes undergo a strict selection process before being destemmed and cooled to 12 to 14 degrees. Fermentation takes place at a controlled temperature in barriques made of French oak. This is followed by eight to ten months of maturation in 350 l barriques of French oak with bâtonnage and roulage. This process yields a creamy, complex white wine with plenty of freshness.
