Vinification
The Maximum rosé brut is made from 70% Pinot noir and 30% Chardonnay, which are harvested in the first half of September. The vines are cultivated in various communes in the Adige, Cembra and Laghi valleys at heights of between 300 and 700 metres above sea level. After the second fermentation, the brut rests for 36 months on the lees.
